Meaty Mondays #4 - Biltong Scones

Hello Monday, let's make things meaty!

Biltong Scones

This is one that has been made famous in the UK when it was featured on a TV show, but it's been around for longer than that and everyone has their take. We like the classic cheese scone version with Biltong added, but you could leave it out or add your own favourite.

Ingredients for 7-8 decent sized scones

  • 450g self raising flour, plus extra for dusting

  • 2 tsp baking powder

  • ½ tsp crushed sea salt

  • 175g grated cheese, try Gruyère or just a strong cheddar

  • 55g butter

  • 2 free-range eggs

  • 275ml whole milk

  • 200-250g Proper biltong, or try chilli if you want some bite! Slice it smaller if you don't want chunks in the scone

We're no bakers, we just know meat, so you could probably look up better informed methods, but put simply here is ours:

  1. Preheat the oven, about 200C/180C Fan/Gas 6.

  2. Mix the flour, baking powder and salt thoroughly. Add 150g of the cheese and stir in well.

  3. Add the butter and mix until it looks like fine breadcrumbs.

  4. Mix the eggs and milk and gradually add to the dry mix to make a dough.

  5. Knead the dough lightly on a work surface and add the biltong as you do so.

  6. Either roll out and fold the dough into a 4-5cm deep sheet then use a cutter to make the scones, or roll it up into a smooth roll and cut 4-5 cm scones. Or just use a muffin tray if you don't care about appearances!

  7. Bake for about 15-18 minutes.

  8. Eat them!
