It's getting a bit cooler in our part of the world as winter draws near, time for a cozy Meaty Monday recipe!
This one's pretty self explanatory, a soup with Biltong. You can add Biltong to any soup that takes your fancy really (usually at the end of cooking to avoid cooking the Biltong excessively), this is just one of our favourites!
Ingredients for 5-6 servings
500g mushrooms, finely chopped
100g of Biltong, finely chopped (more if you prefer!)
2 medium onions, chopped
1 clove garlic, crushed
2 tablespoons plain flour
1 lt hot chicken stock
1 bay leaf
4 tablespoons cream
Salt and pepper to taste
Heat the butter and cook garlic and onions until soft (not browned)
Add the mushrooms and cook for 3 mins
Sprinkle flour over mushrooms and mix
Pour in hot chicken stock, bring to the boil.
Add the bay leaf and simmer for 10 minutes
Remove bay leaf and add the biltong, mixing it in well.
Leave to cool and then blend.
Reheat and mix with cream
